The plant parts (usually petals, but can be roots) are mascerated in alcohol to extract the vital amines that create the smell. This alcohol is then concentrated further and added to other ingredients to form the base perfume.

First of all you can't extract perfume from a plant. You can however, extract the essential plant oils from the plant (roots, stems, foliage or flowers); these extracts can then be used as the basis of perfumes and scents.

"Essential oils" are extracted from plants by several methods such as crushing, boiling and pressure extraction. The oils are then purified normally through a distillation process to concentrate them and remove excess water. The oils are then supplied to fragrance houses (e.g. primrose oil), toiletry manufacturers (e.g. lavender oil), food suppliers (e.g. citrus oil)
