Steam distillation is a purifying technique used to distill a mixture of immiscible substances. The solution boils at lower temperature than either of the separate components (below 100 oC), a factor that causes substances to codistill and prevent decomposition of unstable or high boiling point substances; furthermore, because the substances are immiscible, the distillate will be divided into layers; the desired product can then be isolated using a separatory funnel. Steam distillation is often used in isolationg liquids from natural sources such as Eugenol extraction from cloves.
