Some drywall is available in 10' lengths which, when hung vertically can make for easy 10' ceilings. 4' widths\heights are still common as 4' (48 inches) when working with 16" on center studs is exactly 3 (16*3 = 48) meaning 3 columns of screws when hung vertically so you tend to see 4x8 or 4x10 (sometimes 4x12) sheets
