Errr...they're baked! 180C for 90-120 minutes, skewer to see if it's soft inside.

That will soften the inside but not harden the outside. Rub them first with olive oil to get the crunchy skin, start the oven higher (220C?) and then turn it down to 180 when the skin is harder.

I bake them at a high temp, 450F, the timing depends on the size of the potatos (always use the same size potatos, especially with this method), and just check with a fork to see if they are tender

I do that all the time but not on purpose! I put them in the oven in tinfoil and i guess i cook them too long. I also know that if you put the potatoes in the oven without tinfoil the outside will get almost crunchy and the inside will be soft.

Wash and wrap in tin foil. Toss them on the bottom rack of the oven and bake at 350 degrees for 1 hour (or until soft).

Cut up and coat with olive oil, onion powder, garlic powder, oregano, salt, and pepper. Place in an oven safe pan and bake at 350 degrees until soft.

Steps to make a baked potato:

Mashed: peel, chop into large cubes, boil in pot of water approx 20min or until tender, drain off water, add dash of butter, splash of milk, salt & pepper, MASH with a masher.

Baked: with or without skin. cut or whole. wash, place in baking tray with a little oil, bake at 180 -200 degrees Celsius until tender approx 30 - 40 min depending on the size, serve with butter or sour cream and chives.

Fried: peel, either slice thinly or "chip" length wise. dry off pieces. heat oil in fryer or pan. cook in small batches and drain on paper towel.

Salad: prepare as for mash. remove from stove and drain while still a little firm. allow to cool. dress with mayonaise or sour cream, & your choice of chives, spring onion, bacon pieces, boiled egg, whole grain mustard, green peas or broccoli florets etc.
