The Best possible wood for carving is Evergreen.
Many woodcarvers as do I use BASSWOOD, Its a soft tight grained wood which makes for its popularity. Its very easy to carve, Its true you can use most any wood. NOTE: (the harder the wood the harder to carve) And in some cases (With a knife almost impossible) With the onset of power tools such as grinders, diamond , cutz-all , and carbide bits the harder woods are used more.
