What is the correct procedure to save a document in most Macintosh applications?

[Edit]

For any standard Mac application, use the Save or Save As... command under the File menu.

If the particular Mac application doesn't have a File menu, or chooses to use a different command, report it as a bug to the developer; all Mac applications that save files should use the standard method.
