Organic foods are produced according to organic standardsset by national governments and international organizations. Generally, in developed countries, organic means crops were grown without the use of synthetic pesticides and fertilizers, and with no use of radiation. For animal products it means that there was no routine use of antibiotics or growth hormones.

Farming practices used before the 1900's are classed as organic. It was only after this that added chemicals such as urea and DDT were brought into farming - previous to this, farmers didn't have the knowledge and simply put, were happy enough with things as they were; as most of us today would be. Any food naturally grown without pesticides and chemicals to increase growth are considered organic vegetables.

Organic crops are grown without any petroleum or man-made based fertilizers or chemicals like herbicides and pesticides. Crops are grown the way Mother Nature grows her plants.

In the US, "certified organic" means that the crop has been grown using only those methods which are approved, or certified, by the USDA. To receive "certified" status, the farmer must maintain his field in an organic state for a minimum of five years (in most states) before certification, using only compost, manure, or something similar for fertilizer. He may also use only organic-based pesticides (which includes herbicides) such as Bt (Bacillus thuringiensis) sprays, beneficial insects such as ladybugs, beneficial nematodes for soil condition, and things like earthworms for soil tilth.

Any time you see the "certified organic" label on food you purchase, you should check to see who the certifying agency is. There are a few organizations operating to certify without the authorization or even the knowledge to do so.
