What is the difference between carbon steel and stainless steel knives? |

Carbon steel knives are better to sharpen and don't hold an edge as long but tend to rust, as stainless knives hold their edge longer and are harder to sharpen. This being said depending on the grade of stainless they can be very good knives but myself I prefer carbon steel knives. Hope it helps.
