The coconut virgin oil refined is that one which passes the various stages in a refinery. The coconut virgin oil unrefined is that one which is yet to pass through the various stages of a refinery.

A certified organic food is a food made from plants or animals that are grown without the use of, and without being contaminated with, genetic engineering or synthetic chemicals (most notably pesticides, herbicides, fungicides, synthetic fertilizers, antibiotics, and hormones). A raw food is any food that has not been processed by heat over approximately 118 degrees Fahrenheit.

Therefor, certified organic coconut oil comes from coconut trees grown without the use of the chemicals listed above. However, it can still be extracted or processed with heat over 118 degrees and be certified organic. On the other hand, raw coconut oil may be from trees grown with the use of chemicals, but it cannot be heated over approximately 118 degrees.

There are brands of coconut oil that are both raw and certified organic. If you are looking into coconut oil, I would recommend looking for such a brand.
