Brandy is a distillate and champagne is not. What does this mean? Champagne and Brandy are both made with grapes, however unlike Champagne, Brandy has had a pure alcohol added to the fermented grapes to stop arrest the fermentation and raise the alcohol level of the brandy. Champagne will ferment until dry which means all the sugars will burn off and no other pure alcohol will be added generally resulting in a product with 12-15 percent alcohol. A brandy on the other hand will increase in alcohol level greatly with the addition of the pure grain spirit. So, although Champagne are both made from grapes, they have two completely different results.

Not usually, they have different qualities and flavors. That being said, as alcoholic ingredients for flambeeing foods or flavoring cakes it will work, just the flavor will be decidedly different. In a hard sauce, I most certainly use bourbon more often than I do brandies.
