Traditional sushi are about fresh fish,rice, soy sauce,ginger and wasabi.
They is no deep fried ,sauce, creamcheese,or cook roll like in the western that much. I t is very plane and simpe.
There is a certain difference in the way how Eastern and Western people prepare their fish. For instance Japanese people eat their fish raw in sushi and Chinese steam their fish. Westerner such as British and Americans prepare their fish in fillet form.
THe difference between okay sushi and great sushi can be many factors. Great sushi needs to use the freshest fish, and be put together by somebody who knows how much of each ingredient to use. It also must use well made rice, because if the rice is incorrect it will ruin the texture and flavor.

Maki sushi or makizushi is rolled into a tube and then cut into circles. This is the most common sushi you see. Hand roll sushi or temaki is a whole piece of seaweed wrapped around the ingredients in the shape of a cone. These are left as is and are not cut into smaller pieces like the maki sushi it.
