Flocculation is when particles come together reversibly (eg two spheres), and so can be separated again by applying more heat to the system (increase the temperature, increase the kinetic energy and hence average speed of the particles) and they can move apart.

Coagulation is when particles come together irreversibly - ie they get stuck together and can't be separated.

Coalescence is fusion of particles; unlike coagulation where particles simply stick, coalescing particles actually merge. For example, two spheres coalesce to form one larger sphere.

In water treatment for example there are suspended solids in the wate like clay particles. This haze can be dispersed buy first adding a coagulant. This is a substance selected to have an opposite charge to that of the particles in suspension. Now having no charge the particles are more likely to collide and stick together. A flocculant is now introduced to speed up this process and form an insoluble gel around the particles. When the particles are large enough they sink to the bottom of the settling tank under gravity so that thay can be removed.

Clumping together of brewing yeast is called flocculation. Colloids come of out of suspension in the form of flake. Bascially, it is a process by which individual particles of clay aggregate into clot like masses or precipitate into small lumps.
