The most important difference between hem is that, the piston is working to create force or energy, means the energy is important for carrying out some activity as like as pistons in cars,

but plunger role is exciting some process for carrying out any activity for example when you push some buttons in car (heater button) first you push it and after exciting the sensor the activity would be carried out.

However, plunger pumps can handle higher pressures than piston pumps

Plunger pumps more than 1000 psi.
