Both are igneous rocks, but whereas volcanic rocks are formed from cooling lava on the surface, plutonic rocks are formed from cooling magma below the surface.

So plutonic rock is an igneous intrusive rock, while volcanic rock is extrusive.

The composition of volcanic rocks depend on the initial composition the primary magma followed by differentiation. The initial composition is usually basaltic which is followed by a number of differentiation series which include tholeiitic, calc-alkaline, and alkaline.
