It shuts off the same way as a normal tap however, a gate valve has no washer of any kind, what shuts the water off is the mechanism inside the valve which is engineered in such a way that the metal disk inside slides up and down inside the valve body with a very fine tolerance shutting off the water. However, gate valves have been known not to shut off water properly either because the tolerance inside is not small enough which allows water to flow through or when the valve gets old it starts to form deposits on the sliding disk which prevents it from closing properly. This valve cannot be serviced. Not recommended at all.

Difference is that a gate valve works on a thread system and a butterfly valve works on a lever system, a gate valve takes awhile to turn off and can be problematic should the thread cease up after time, the butterfly valve is an instant turn off system and requires no maintenance.

They are often used for solid granular medium control, such as on grain chutes or powder filled hoppers, as granular solids do not need a positive shut off valve to stop their flows. Butterfly valves can be manually set partially open, or be controlled automatically to throttle or control flow volumes.

A gate valve is a positive shutoff valve, is not balanced, thus can be difficult to open under pressure, used specifically to isolate fluid lines, do not leak, unless worn out, and should not be set partially opened to control fluid flows, they must be opened or closed fully to prevent damage.
