How difficult or easy a degree is depends on the individual, and possibly the college or university at which the degree is studied. That being said, and not going into the reasons why you are asking this question, I would suggest you stay within the liberal arts area. There are some institutions that offer a 30 credit masters in liberal arts, or sometimes called liberal studies.
If you are getting an AA or AS, then the easiest major is pretty much any major besides science and math. usually either graphic design or psychology
