Christmas songs of a liturgical nature date back as far as the 10th century.

But the oldest, documentable song is "Veni, Veni Emmanuel" which was originally written in Latin in the 12th century and sung as a chant, till the 15th century when a French melody was put to it.

It was translated into English by John Mason Neale in 1851, and became popular as "O Come, O Come Emmanuel".

If you're referring to the song "The Christmas Song" (also known as "Chestnuts roasting on an open fire"), it was written in 1944 by singer and composer Mel Tormé with his friend Bob Wells. According to Time Magazine, Tormé and Wells were dealing with an oppressively hot summer, and Wells had sketched out phrases like "Jack Frost nipping" and "Chestnuts roasting" as a way of trying to think of winter and perhaps feel a bit cooler. When Tormé saw what Wells was writing, they hit on the idea for a Christmas song, and wrote out the entire lyric together. Wells probably wrote most of the lyrics, while Tormé fleshed them out and wrote the music. The process allegedly took all of 45 minutes.

The song was recorded a couple of years later by the Nat King Cole Trio and became one of the most performed Christmas songs ever.
