For example, a person touching a hot stove would flinch before thinking about it, and protect tissues from further damage.

It is useful as it means the signal does not have to go all the way to the brain and back to the muscle to react, instead it goes to the spinal column and back again which is slightly quicker meaning you can react more quickly e.g. if you touch something hot

btw this is why you react before your brain feels pain
