The history of candy dates back to ancient peoples who must have snacked on sweet honey straight from bee hives. The first candy confections were fruits and nuts rolled in honey. The manufacturing of sugar began during the middle ages and at that time sugar was so expensive that only the rich could afford candy made from sugar. Cacao, from which chocolate is made, was re-discovered in 1519 by Spanish explorers in Mexico.
Chocolate through the ages The amazing tale of a sweet candy, chocolate, begins with a tree, the Cacao tree. This tree produces large pods that contain anywhere from 30-50 seeds, enough for 7 whole bars of Milk Chocolate. The cacao tree can only be found in central/south American rainforests. The people of this region, the Mayans, were the first to use the pods, as the trees could not live anywhere else on the planet. They crushed them and created a spicy, tasty beverage that had an important role in their culture. Next, the drink spread to the Aztecs in the wake of the downfall of the Mayan civilization, and the Aztecs were growing in power. Cacao was traded widely, from conquered people to the rulers. After the Aztecs were conquered by the Spanish, chocolate found its way to Europe through the hands of Spanish Explorer Hernán Cortés in 1521 A.D. Yet Cortés' men did not quite like the spicy flavor of chocolate, so they heated it and added in a few ingredients. About 100 years after chocolate got to Europe, someone found out how to sweeten the spicy beverage with sugar, which the Aztecs could not get. So they added sugar and cinnamon were added and BAM! hot cocoa was born. But other than adding these ingredients, the Spanish did not add any other significant additions to the chocolate making process. The only other addition was the addition was the molinillo, which was a stick used for frothing chocolate much easier. Chocolate was mostly used by the Spanish court. A legend has it that a group of Dominican friars took a delegation of natives to visit Prince Phillip, then the prince of Spain. They gave the prince some chocolate, which started the popularity of chocolate in the court. Because Spain was the first to learn about it, they had the monopoly of the chocolate trade in Europe, for many years. But only the most wealthy and important people could afford this treat. Chocolate was so important in Spanish culture that it was even drunk in the Spanish Catholic Church. It was even allowed to be drunk during fasting periods because of its caffeine and theobromine content. Chocolate stayed in Europe until the Industrial revolution, when chocolate was available to most of the world. In the early 1700's a Frenchman named Doret invent a hydraulic machine that was used to grind the seeds of the Cacao tree into a paste, making the chocolate making process much quicker. Just after, another Frenchman named Dubisson created a steam driven chocolate making machine. These two machines sped up production and made it possible to mass produce chocolate and to decrease the price of chocolate. The machines also made chocolate into a smoother, creamier bar instead of the grimy paste it was. Even another invention was the cocoa press invented by Coenraad Van Houten. It squeezed cocoa butter and made cocoa consistent and cheap. A few new ingredients helped chocolate on its way, too. In 1815, Van Houten added some alkaline salts which helped the mixing and coloring processes. In 1875, Daniel Peter and Henri Nestlé introduced milk to chocolate and created the world famous 'Milk chocolate'.

It is thought that islanders in Papua New Guinea used sugarcane juice first. By boiling sugarcane juice, Indians were the first to make brown sugar.
