There are many fish caught...which way do you mean..by rod and reel? or by net?
Sturgeon grow in excess of of 1700 lbs and would be the largest fresh water fish. I believe the larger historical records have some sturgeon of the world in excess of 4000 lbs, I haven't been able to verify that to date.
The largest living bony fish is the Ocean Sunfish (Mola mola),
There's a freshwater stingray that was caught on rod and reel. in Thailand recently that weighed over 750 lbs.
