In medicine a "holistic" concept or as I'd like to call it an "approach" is the theory of treating a patient's whole mind, body, and spirit (soul). So say you have a chronic pain patient you can offer them things like Talk Therapy, Cognitive Behavioral Therapy (CBT), etc. for the mind. You could offer them medication for the pain for the body. And then finally you can offer them spiritual services that meet their particular beliefs and values.
