Generally carass weight includes the bones in the main part of the animal.

The percentage of meat and bone (% yield) from most animals that are bred for slaughter (cows, sheep, pigs etc.) are in the 50-70 percent range based the type of animal.

Horses probably run in te low end of this range as they are not bred for slaughter.

Certain of the more muscular breeds of horses, especially those that have lighter bone would yield higher.

An animal with a live weight of 1000 pounds would have a carcass weight between 500 and 600 pounds.

The other answer is that no horses have edible meat (whether this is because they are loaded with chemicals or can't be slaughtered humanely) so zero pounds.

The last part of the answer, regarding "zero pounds" is incorrect. There have been restaurants around the world that serve horse meat for decades and as such there have been humane slaughter farms as well...
