Classically-speaking, it is a multi-instrumentalist, although that's a bit of a mouthful!
Answer
In the orchestral world a musician who plays more than one instrument is said to "double", even if they play more than two instruments. For example, there might be a violinist who doubles on viola and piano. Sometimes a piece will call for a musician to play two instruments (though not simultaneously!), such as a flute part which also has writing for piccolo.
Some of the best ever songwriter's of all time can play a range of instruments for example Maurice Gibb,Guitar,Keyboards,Bass,Mellotron, or George Michael,Paul McCartney,Cat Stevens,Barry White,Drums,Bass,Guitar,Piano .Bob Dylan...Gilbert O' Sullivan,Piano,drums,guitar...Billy Joel, piano, harmonica, guitar
