It's Windsor, simply Windsor.

The royal house and family name was changed by royal proclamation from Saxe-Coburg-and-Gotha in 1917, largely due to anti-German sentiment fuelled by the Great War.

Before that period Queen Victoria had favoured the idea of her descendants ruling under the name Wettin, which never really caught on.

The current consort Prince Philip, Duke of Edinburgh, seeking to avoid similar problems renounced his family name, Schleswig-Holstein-Sonderburg-Glucksburg before marrying Elizabeth and renamed himself Mountbatten, a name his grandfather had created in 1917 from the original family name Battenberg (Also, you'll note German).

So the Queen is a Windsor, and her descendants who are styled His/Her Royal Highness with the title of Prince or Princess are also Windsors.

Those of her descendants who are not styled His/Her Royal Highness Prince/Princess are Mountbatten-Windsors.

Why did george v adopted the name windsor as the surnamo of royal family?

In 1917, World War I was in full swing. Naturally, the British people did not like Germany. But, the German Royal family mixed quite frequently, so the British Royal family were a branch of the House of Saxe-Coburg and Gotha. Many people did not like this as it represented a tie between the two battling countries. So, to show that the British Royals were seperate, King George broke off the Saxe-Gotha family and created his own new house: the House of Windsor. Windsor is a much more British-sounding name, so it made people in England happy.
