It means being content and happy in general while ignorant and oblivious one's present true situation (usually a bad one). Being "happy" out of complete ignorance. Not unlike the term "Happy as a Clam".

The pig is DEAD. It knows or feels nothing. The "smile" (appearing happy) being due to the skin of its lips drying out in the sun and exposing its teeth.

The phrase "happy as a dead pig in the sunshine" is a humorous exaggeration meant to convey extreme contentment or pleasure. It likely originated as a playful way to emphasize a sense of carefree enjoyment, playing on the idea that a pig would be happy in the sunshine even if it were dead.
