The best way to cook swordfish is to dredge it in lime juice, coat it with blackened fish seasoning, and sear it in a pan on high heat for a minute on both sides. Then transfer it to an oven at 350 degrees until the internal temperature reaches 125 degrees (medium rare). I prefer my fish a little more done and flakey, so I cook it to 140 degrees (well done).
