Depends on which King or Queen you are talking about.

The current Queen of England holds the surname Windsor.

Queen Victoria's surname was Hanover but I believe it changed when she married.

And before then you can tell what the family name of the monarchs was by the name used to describe their periods in history.

The Georgians

The Stuarts

The Tudors

Except for the Georgians there I am positive the family names of the monarchs during these periods were Stuart and Tudor. So Henry VIII's family name was Tudor.
