hydrolysis... my Biology book says that... cells dissasemble macromolecules into their constituent subunits by performing reactions that are essentailly the reverse of dehydration- a molecule of water is added instead of removed.

Macromolecules are assembled through the process called dehydration process( -OH and -H are removed as subunits are joined), and they disassembled through hydrolysis(- OH from water attaches to one subunit and -H from water attaches to the other subunit).
