Ingredients
  • 8 ounces dry penne pasta
  • 1 tablespoon cornstarch
  • 1 (15 ounce) can chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 4 skinless, boneless chicken breast halves - cut into cubes
  • 1 onion, sliced
  • 1/2 green bell pepper, seeded and thinly sliced
  • 1/2 red bell pepper, seeded and thinly sliced
  • 1 (16 ounce) can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 cup medium-dry white wine
  • 1/2 cup freshly grated Parmesan cheese
Directions
  1. Bring a large pot of lightly salted water to a boil. Add the penne pasta and cook until al dente, 8 to 10 minutes. Drain, and reserve pasta.
  2. Whisk the cornstarch and chicken broth together in a bowl until smooth. Set aside until needed.
  3. Heat the olive oil in a skillet over medium heat. Add the garlic and chicken; stir and cook until the chicken is no longer pink and juices run clear, about 10 minutes. Stir in the onion, and green and red peppers; cook until tender, about 5 minutes. Stir in the tomatoes, and simmer for 10 minutes. Pour in the chicken broth mixture and wine, if desired, and season with oregano and basil. Stir in the cooked pasta, and simmer over medium heat until thoroughly heated through, about 5 minutes. Serve garnished with Parmesan cheese.

When I make chicken spaghetti, I do it the easy way. I brown chicken thighs in olive oil and minced garlic first. Then add some chopped onion and pepper to the pan. Add 2 large cans of stewed tomatoes and cook for about an hour until chicken is tender. Boil up one pound of spaghetti and toss it into the pot. Mix until everything is blended and serve with parmesan cheese. Now I want chicken spaghetti.

You take pasta dough and roll it out till it fits through the extruder. Then run it through until it is nice and thin. Then run it through the wide cutter on the machine. Lay on a flat surface until it is time to cook

CHICKEN FETTUCCINE ALFREDO1/4 c. butter

1/4 c. olive oil

1 lb. boneless, skinless chicken breasts, cut into 3/4 inch cubes

1/2 c. chopped green onions with tops

2 cloves garlic, minced

1 c. whipping cream

1 pkg. McCormick Pasta Prima Alfredo Sauce

12 oz. fresh mushrooms, thinly sliced

15 oz. can tomatoes, drained and diced

1 tsp. salt

1/2 tsp. freshly ground pepper

1/4 c. chopped fresh parsley

2 tbsp. dried basil

1 lb. hot, cooked fettuccine

1/2 c. freshly grated Parmesan cheese

Heat butter and olive oil in a large heavy skillet over medium heat. Add chicken, green onion, and garlic; saute until chicken is lightly browned. Stir in cream, sauce mix, mushrooms, tomatoes, salt and pepper. Bring to a boil over high heat. Reduce heat to medium and simmer 3 to 5 minutes or until sauce is slightly thickened. Stir in parsley and basil. Remove from heat. Toss pasta with sauce, sprinkle with Parmesan cheese. Serves 6 to 8.

Boil some water. Put your fettuccine noodles in. When they're tender, drain them. Cook small bits of chicken with a little bit of oil. Mix the noodles and chicken together along with alfredo sauce. You can add spices to taste. I like to add garlic powder.
