If you want to do it the fast and easy way: Boil the chicken in water, white wine and add herbs-- like rosemary and thyme or tarragon is always great w/this!-- to the water. When it's done, cut the chicken off of the bone (I only use chicken breasts and make sure I get any gristle/fat off of it.) Then you're ready to add the mayo, celery, scallion, etc.

Crispy chicken usually means fried. Remove any bones from the chicken and slice it into pieces (unless you prefer to use the piece whole). Put it on a slice of bread and add whatever you like on a chicken sandwich (mayo, tomatoes, lettuce, etc.). Top with another piece of bread and you're done. Here's what you need:

2 cups of cooked chicken chopped up into cubes or shreds

1/2 cup chopped walnuts

1 cup red grapes cut into halves

2 cups of diced fresh apples

1 cup chopped celery

1/2 cup mayonnaise

1/2 cup honey mustard

Salt and pepper for seasoning

Method: Mix all the ingredients together. Whisk the dressing in a separate bowl. Season it with salt and pepper and pour over the salad ingredients. Toss well and serve.

You can even roast the walnuts in the oven before putting them in your salad.
