The basic recipe is fairly simple:
1/2 stick (1/4 cup) butter, softened
1 pkg (8 oz.) cream cheese, softened
1 cup shredded cheese (your favorite flavor for the roll), room temperature
1 tablespoon herb if desired
1 tsp spice if desired (paprika or worcestershire sauce give a smoky flavor)
1 tbs milk
crumbs, herbs or crushed nut topping
work all the ingredients together [except the topping] until well incorporated (a dough hook or a beater both work well for this)
Grease a mold or wax paper to shape the cheese.
press the cheese into the mold or roll in the wax paper. Refrigerate immediately for at least 2 hours but not more than 4.
while still slightly soft roll (or press) the cheese in the crumb or nut topping.
