In past generations, little girls would imitate their mothers' who made pies at least once a week. Before commercial play clay or "Play Doh" was easily available, children often played with mud, shaping the cool wet stuff into pretend pastries or "mud pies."
Now there are a number of chocolate confections known as "mud pie," typically incorporating chocolate cake with rich sauce along with chips or nuts for "stones" and brown sugar or cookie crumbs as "sand." The addition of candy "gummy worms" is particularly appropriate.
This is how I make my Mississippi mud pie-
BASE - 200g crushed digestives
60 g Dark Chocolate
60 g butter
Grease a 22 cm drop-bottom tin. Melt the chocolate and butter together over a low heat (heat a pan of slightly simmering water and put the ingredients in a bowl over the pan) Stir until they have melted and then add the biscuit crumbs. Press in to the bottom of the tin and put in the fridge.
FILLING - 180 g dark chocolate
180 g butter
3 large eggs
90 g light muscavado sugar
90 g caster sugar
200 ml double cream
Turn the oven on and set at 180°C fan oven)
Melt the chocolate and butter together as you did before, stiring gently as it melts. Whisk the eggs and both sugars together, until combined. Add the double cream to the egg mixture and whisk again, until thoroughly combined. Add the chocolate and butter mixture to the egg mixture and fold in with a wooden spoon. Take the tin out of the fridge and pour the whole mixture over the breadcrumb base. Place in preheated oven and bake for 40-45 minutes, until the filling looks firm on top, but it still wobbles when you touch it.
TOPPING -
100 ml double cream
2 tbsp icing sugar
Whip the cream. Add the icing sugar and spread over COOLED cake.
Hint- It is very important that the cake is cooled, otherwise the topping will sink into the filling and it won't work as well.
