Don't touch an object that is hot enough to burn you. You can use either oven mitts or tongs to handle such objects. You can also just wait for it to cool before handling it.
That depends on how hot. If it's too hot, don't handle it at all. If it's reasonably hot, use gloves. If it's a fluid then also wear safety goggles. If it's in a test-tube then pick it up with foreceps.
