The "true oysters" are members of the family Ostreidae. This family includes the edible oysters, which mainly belong to the genera Ostrea, Crassostrea, Ostreola or Saccostrea. Examples are the Edible Oyster, Ostrea edulis, Eastern oyster Crassostrea virginica, Olympia Oyster Ostreola conchaphila, Pacific Oyster Crassostrea gigas, Sydney rock oyster Saccostrea glomerata, and the Wellfleet oyster (a variety of C. virginica).

Integrated Taxonomic Information System (ITIS) records the species name as Crassostrea gigas kumamoto a subspecies of C. gigas. However there are some who believe it should be listed as a separate species, since it is very different from the other C. gigas in physiology and morphology with the species name Crassostrea sikamea.

There are several oysters native to the coastal waters of the United States. A typical and much farmed example would be Eastern Oyster of the Chesapeake Bay area, scientific name Crassostrea virginica.

"Shellfish" is a very broad term that includes aquatic invertebrates that have an exoskeleton (a hard outer shell).

American lobster - Homarus americanus

Giant tiger prawn - Penaeus monodon
