I have 255/65-16 on my 2008, works great, and looks better than stock Regardles of looks, keep the original tire size. Reason being, if there is some kind of failure which happens to be tire related (Ex: older Ford Explorer with rollovers) you will have no recourse from the tire manufacturer (even if it was a tire defect because you didn't install the recommended tire.) dealer or Ford.

235/70 R16 are a standard size tire on 16" rims for the escape. But your Escape could have been delivered with 15" or upgraded 17" rims. So when you say "stock wheels", the answer is yes, they will as long as you have the matching 16" rims.
