According to the Guinness book of records, Bhut Jolokia from India is the hottest pepper. It rates at 1,001,304 units on the Scoville scale.

It gives a slight burning feeling in the mouth and after swalowing heat increases greatly and throat burns and gradually heats up more and more.......

How hot is this "Ghost Chilli" compared to other chili peppers? It has more than 1,000,000 Scoville units, the scientific measurement of a chili's spiciness. The spiciness is measured by calculating its content of capsaicin, the chemical that gives the spice flavor in the pepper.

In comparison to other hot spices available in the market, a Classic Tabasco sauce has 2,500 to 5,000 Scoville units, Jalapeño pepper measures 2,500 to 8,000 Scoville units, and the previous world record holder Red Savina Habenero contained 580,000 Scovilles. The "Bhut Jolokia" on the other hand tested at a staggering 1,001,304 Scoville units.

The hottest Chile (pepper) is from Northeastern India and is named the Bhut Jolokia (which translates into "Ghost Chile") and also called the Naga Jolokia (King Cobra chile), and many other regional names in Asia. It is of the Capsicum Chinense species as are the Habanero, Scotch bonnet, and Datil. In the heat scale measurement called Scoville Heat Units (SHU), they significantly surpass all prior measured chiles with a rating over 1,000,000 units.

Until this chile was scientifically measured and certified as the hottest chile by Guinness Records in February 2007, the previously considered "World's Hottest Chile" was the Red Savina (Habanero), which reached around 600,000 Scoville Units. Individual plants, and varying growing conditions affect the heat; more arid conditions reduce the capsaicin which is the alkaloid that gives chiles their heat, ratings are usually measured in multiple field tests to determine the typical or average SHUs. The Red Savina is scorching to all but the most "hardened" chileheads.

Seeds of the Bhut Jolokia were brought to the US by Professor Paul Bosland (a well known chilehead), of the New Mexico State University Chile Pepper Institute in 2001. These seeds were then grown in New Mexico for several years to produce enough for proper study, and in 2005 when tested his crops produced SHU's of 1,001,304.

In comparison, the much milder jalapeño chile comes in at around 5,000 SHUs (they range from 2500 - 10,000 SHUs).

A World Record attempt to eat the most of these hottest of chiles in the shortest time was made in early April 2009 by an Indian woman, Anandita Dutta Tamuly, who ate 51 in two minutes in Jorhat, India! It is not yet made official (as of late April 2009), but is expected to earn her the Guinness record.

But beware of eating even the tiniest sliver of one of these chiles; people who have eaten them their entire lives in Northeastern India say eating them raw is "like dying" and advise "outsiders" not to even attempt to eat them. Although one might expect them to perhaps cause some stomach irritation, on the contrary, they have long been used as a cure for stomach ailments in that part of India. It is definitely not recommended that you try eating 51 in two minutes!
The Carolina Reaper has held the spot since 2013 at a peak of 2.2 million Scovilles.
