Tonnarelli (or spaghetti alla chitarra) is an egg pasta. Are presented as a "square" cut and it's large about 2-3 mm and thick about the same. The permeable consistency allows the sauce to adhere completely.
Named after the guitar-like device used to cut the pasta, which has a wooden frame strung with metal wires, sheets of pasta are pressed down onto the device, and then the wires are "strummed" so the slivers of pasta fall through.
In Puglia they call them troccoli from the Deliceto vernacular.
Cheese and pepper is the English translation for this classic Roman dish. Made strictly with Pecorino Romano cheese, fresh black pepper and pasta (usually spaghetti or handmade tonnarelli), the recipe is simple and has survived for thousands of years. It was once a staple for the ancient Roman legionaries, and is one of the first solid foods eaten by infants in much of Italy.
