Yeast is a bacteria found in bread and many other baking products that makes the dough rise. When it is inserted into the oven, yeast cells reproduce under the heat to form thousands of new yeast cells. These yeast cells take up more space, therefore forcing the bread's crust upwards to accomodate more room. It is because of this process that breads rise.
