Generally your first cousin, once removed can be one of two things:

1) The children of your first cousins; or

2) Your parents' first cousin(s) (aka the children of your grandparents' siblings, or your grandparent's nephews/nieces, whichever way you want to look at it.)

Cousin is simply anyone with whom share the same ancestors, other than your parents. If you share the same parents, then obviously, you are siblings. First cousins share the same grandparents, second cousins share the same great grandparents, third cousins the same great great grandparents, etc.

"Once removed" represents how many generations separate you from the cousin you share the same ancestors with. So, in the case of first cousins, once removed, you share the same ancestors, except that one of you considers them grandparents, and the other considers them great grandparents.
