When taking a turn, your body and bike still 'want' to continue their movement in straight path. That's the property of matter called inertia. To actually make a turn you need some kind of force to pull bike towards the center of circle. When bending, you make gravity force do it. Actually, when considering bikes, it's more the mentioned bending, ie. weight shift, than turning handlebars that makes you turn.

For rear drive cars - it's called a fishtail. You brakes work better on the front. Anybody who sailed over the handlebars when braking just the front wheel on a bike is called a head plant, (ouch)
