If you're talking about the ALH tdi motor, (1999 to 2004 year) it takes a fully synthetic CF-4 rated 5W-40 oil. Replacement every 14000 kilometers (8750 miles). Mine does not burn any oil for the full 14000 km's.
I only found this oil from two manufacturers. Mobil 1, called turbo diesel truck synthetic.

Castrol offers a 5W40 syntec for all Mercedes and BMW's but it has a label on it that it's rated for all VW tdi engines also. I researched this, and it's CF rated, but not CF-4 which is the newest standard. In any case i think both are very good oils.
Takes 4.4 Litres roughly. Each time you replace the cartridge filter, you must replace the O-rings that come with them.

Take the skid plate of the bottom of the engine compartment. The oil drain plug is located on the back center of the oil pain. It's a 19mm bolt.

If you have a tdi jetta then you would have a sealed transmission, so you can not check the fluid level on those transmissions
