In short, believe it or not they spoke Greek, which is one of the oldest documented languages. The earliest form of the Greek language is considered Proto-Greek, which could possibly be what you mean by "ancient greeks" though if you are speaking of a certain time frame that would narrow it down.

There were three main dialects of the classical Greek language: Aeolic, Ionic, and Doric, corresponding to the three main tribes of the Greeks, the Aeolians (chiefly living in the islands of the Aegean and the west coast of Asia Minor north of Smyrna), the Ionians (mostly settled in the west coast of Asia Minor, including Smyrna and the area to the south of it), and the Dorians (primarily the Greeks of the coast of the Pelopennesus, for example of Sparta, Crete and the southernmost parts of the west coast of Asia Minor).

Ancient Greece had several languages plus their dialects. There was Aeolic, Doric Ionic, Attic and Koine. Alexander the great and his army spread the Koine Greek version, which was the language of the common people, to all the countries he conquered. Koine Greek became the language of the educated in the Mideast and Rome itself. It is also the language that the ancient writers used, including the writers of The Bible.
