Most likely the air conditioner compressor is seized. When the a/c is off, the a/c compressor pulley just idles (spins freely), but when the a/c is on with a seized compressor, the pulley locks up and stops the serpentine belt from turning, thereby stalling the engine. Try it too often, and you'll shred the serpentine belt.

Unfortunately, it's not a cheap fix. Expect to pay $1000- $2000 or more (depending on the situation and the shop) for replacement and repair, since you must also replace several other a/c parts along with the compressor in order to validate the new compressor's warranty.

Also note: The defrost setting on most vehicles with air conditioning will also activate the a/c, so avoid using that as well if you are experiencing this problem.
