Because he ate some earlier. Dogs love to eat stinky things, and poo is pretty high up on the funkometer. It's not a good thing, however, as they can easily contract diseases from it. You can prevent this by cleaning up after him regularly. Dog poo doesn't biodegrade nearly as quickly as you might think.
