Everything that grows from the ground is kosher.

There's nothing in a jar of pickles to make it non-kosher, as long as it doesn't come

in contact with other ingredients, or machinery, used in non-kosher products.

"Kosher pickles" are something of a unique case. This particular item is called "kosher"

strictly because of its close association with a style, a genre, a culture, an ethnicity,

a region in cooking, and not because of any technical involvement with the Jewish

dietary laws. They could just as well be labeled "Eastern European Pickles", but that

would require bigger labels on the jars.

Most hechsher stamps on dill and other pickles (such as the Star K stamp and others which guarantee food is kosher) will include the word parve or pareve. Parve refers to food that in neutral according to kashrus (kosher laws), and is therefore neither kosher nor treif (non-kosher) and as a result can be eaten by observant Jews. Those that have such a stamp are made by companies either owned by Jews or well aware that Jews - who tend to have a great fondness for pickles - make up a lot of their customer base and so they are willing to pay a hechsher authority for the right to use their stamp. If the product contains no animal products, as is the case with many pickles, it is parve - any food with a label declaring it to be suitable for vegans will be parve. If you suspect it contains an animal product, look for the hechser stamp.

So, to answer your question, kosher and "genuine" dill are the same, unless the "genuine" dill contains a non-kosher animal product among the ingredients.

Since the production of dill pickles doesn't require the use of meat or milk, probably very little in most cases. Kashrut - the set of laws that determines whether or not a food is kosher - apply only to foods derived from animals: all plants and products derived from plants (ie cucumbers and vinegar) are parve, a word meaning neutral and neither kosher nor treif (not kosher). However, many Jewish people will not buy food unless it carries a hechsher stamp guaranteeing it to be suitable for their consumption, so kosher pickles will have a stamp guaranteeing them to be parve.

There is no difference other than the plant that the kosher pickle is produced in would be under kashrut supervision.
