Blood viscosity relies on water to change (usually). Being very hydrated causes your blood to manageably thin. It is easier to pump thin blood as opposed to thick blood (so this is obviously ideal for your body). When you are dehydrated, your blood will thicken in response. This increases the time it takes for fresh oxygen to make it to your cells. This causes early fatigue, nausea and other effects.

High sodium works to dehydrate you (which is why energy drinks and sodas are a bad choice of beverage when you are dehydrated).

There are chemicals that adjust how quickly water cycles through your body and such chemicals are needed for patients with high blood pressure.
