Osmotic and oncotic pressure are the major ways the body holds onto fluids. Are you asking about the body holding excessive fluid? Heart failure and kidney failure are the two biggest contributors to excess fluid volume. If the heart is not strong enough to pump blood all through the body, then blood will begin to pool in the areas not getting good circulation (generally in the legs and arms at first). This gives water in the blood enough time to diffuse out of the blood stream and into the space around the blood vessels (EDEMA). If the heart does not pump enonugh blood through (functioning) kidneys, then the kidney will not be able to filter out enough water from the blood. Which brings me to the kidneys. If they are not functioning (for whatever of the multitude of possible reasons), they are unable to remove excess water from the blood. The kidney will also remove excess sodium from the blood (salt). This sodium, when in the blood, increases the osmolality of the blood, causing it to draw in more fluids from the body to the circulatory system. Eating salt doesn't effect water retention over the long run provided your heart and kidneys are functioning adequately.
