People say Happy Holidays not to attack Christianity, but to be polite, because guess what, not everyone is Christian and not everyone celebrates Christmas. So if you want to be polite, say Happy Holidays if you do not know if they specifically celebrate Christmas or not (if you know someone does then it is of course acceptable to say Merry Christmas). It is fair and polite; it groups religious as well as ethnic holidays into one.
