I think the have used Brahm's German Requiemme for most of the back ground music to the series, as well as the introduction and end credits. I saw only the one dealing with Poland, and I was very impressed. I have not yet isolated the section from the Requiemme that they used, but I am fairly certain it is the recurring piece through the series...and very well chosen too!
