The amount of available plants (or foods that are derrived from plants, like seeds) that can be eaten by humans is vast. To begin with, you can have fruits and vegetables. Grains (like oats, wheat, and flour - all which make bread and pastas) come from a plant. Nuts (peanuts, almonds, pecans, pine nuts, brazillian nuts, hazelnuts, chesnuts, and so on) and seeds (sunflower seeds tase really good!) all are from plants. Tea leaves and coffe beens are plants. Almost every herb and many spices come from plants, and a lot of oils (canola, corn, vegetable, sunflower, ect.) are derrived from plants. Though it may seem a bit exotic, trees can be eaten in the form banana leaves. Cactus can also be eaten (the fleshy meat is actually nice and tangy as a marinade!).

It depends entirely on the plant, but almost all plant parts are edible across the range of plant species in the world. One main exception is wood. Wood as defined by secondary xylem and/or plant stems hardened by lignin is not digestible. Young shoots of bamboo are edible, however. Although bamboo is thought of as wood, it is not true wood, but rather a member of the grass family.

All major plant parts are edible, depending. These include roots, other underground storage organs (tubers, bulbs, runners...), stems, leaves, flowers, fruits, and seeds.

Examples:

Root - carrots, sugar beet, turnip

Other underground storage organs - potato, ginger, onion, garlic

Stem - celery, lemon grass, rhubarb, asparagus

Leaf - spinach, brussels sprouts, lettuce

Flower - violet, rose, squash blossom, broccoli buds

Fruits - melon, cucumber, tomato, you know these ones

Seeds - wheat and other grains, sunflower seeds, pine nuts, peanut

Not all of these parts are edible on all plants. Some are tough, bitter, difficult to digest, or otherwise unpalatable. Others are poisonous.

There are some intersting plants in which several parts are edible. One example (I think) is celery. You can buy celery stalks (with edible leaves attached), celery root, and celery seed in the supermarket.

It depends on the plant. Some plants we just eat the fruits (apples, Oranges, watermelon). Others we eat the roots (potatoes, carrots, rutabaga), others we eat the leaves (spinach, dandelion, kale).
